Introduction to Coffee

The course is aimed at participants who wish to acquire a basic knowledge of coffee as a product. The path of coffee is considered from its origin to the cup. In the course of many practical exercises, participants learn how to taste a cup of coffee for professional purposes. Furthermore, various methods of coffee brewing are presented.

 

Course contents

  • Green coffee: cultivation, species, harvesting and processing, quality criteria
  • Roasted coffee: roasting process  
  • Brewing coffee: brewing methods and coffee beverages
  • Introduction to sensory skills for coffee: taste, flavour and tasting technique

  • knows the factors that influence the quality of the cup.
  • understands the roasting process as a refining process.
  • knows how to taste and describe a cup of coffee.
  • knows a variety of preparation methods.
  • can carry out basic quality control on all aspects of coffee itself and take the right measures if quality is compromised.
  • feels ready for the SCA CSP Introduction to Coffee examination.

Examination:

CSP Introduction to Coffee: 10 points

Theoretical examination according to the specifications of the Specialty Coffee Association (SCA) is held independently by the participants as an online examination within 21 days after the training. Instead of taking a practical exam, the participant receives individual feedback on the state of his or her skills. This serves as a basis for a possible further deepening of the coffee knowledge by the participant.
Certification: Examination and certification cost CHF 100.–
